Lemon curd and shortbread
Yesterday evening I made delicious shortbread and lemon curd. Both recipes are from allrecipes.com and can be found at http://allrecipes.com/Recipe/Heavenly-Shortbread/Detail.aspx and http://allrecipes.com/Recipe/Lemon-Curd/Detail.aspx
For the shortbread I quartered the recipe since I'm the only one who eats it around here :)
Lemon Curd

Ingredients
- 3 eggs
- 1 cup sugar
- 1/2 cup fresh lemon juice
- 1/4 cup butter or margarine, melted
- 1 tablespoon grated lemon peel
Directions
- In the top of a double boiler, beat eggs and sugar. Stir in lemon juice, butter and lemon peel. Cook over simmering water for 15 minutes or until thickened.
Heavenly Shortbread

Ingredients
- 2 cups butter, softened
- 1 cup white sugar
- 4 cups all-purpose flour
- 2 teaspoons cornstarch
Directions
- Preheat oven to 325 degrees F (170 degrees C).
- Cream softened butter thoroughly. ( If using margarine, add four drops of butter flavoring.) Slowly add sugar.
- Sift flour and corn starch before adding. Mix well. Press into an ungreased jelly roll pan 11 x 15 x 1 1/2 inches.
- Bake 30 minutes or until very light brown. Score and cut while warm.
